Per Boing Boing, Delish food editor Brooke Caison explains why tomato sauce stains plastic containers: lycopene, a heavily pigmented antioxidant in cooked and canned tomatoes, repels water, and plastic repels water too — so the pigment bonds directly to the container. Heat makes the staining worse.
