One common fat may fuel type 2 diabetes while another helps fight it

According to research from ScienceDaily, not all dietary fats affect your body the same way. Scientists have found that palmitic acid—a saturated fat common in processed and fried foods—may trigger insulin resistance and type two diabetes by causing inflammation, toxic fat buildup, and cellular stress. But oleic acid, the heart-healthy fat abundant in olive oil, appears to protect insulin function and may even counter some of palmitic acid's harmful effects.
