Researchers at the University of Rhode Island and the University of Texas at Austin have developed wearable sensors to monitor eating. The system uses inertial motion sensors worn on the wrist and jaw, paired with machine learning, to understand what researchers call the microstructure of ingestive behavior—the mechanics of chewing. Per Adafruit, the research was published in the journal Nutrients in May and combined digital video analysis with the sensor data.
